Prep Time 10 minutes
Total Time 10 minutes
Servings: 2 servings

Ingredients

  • 3 cups seedless watermelon, cubed and chilled
  • 1/2 cup cucumber, peeled and chopped
  • 1 small lime, juiced (about 1–2 tablespoons)
  • 6–8 fresh mint leaves
  • 1/2 cup cold coconut water or plain water
  • 1/2 cup ice (optional, for a frostier texture)
  • Pinch of sea salt (helps with electrolytes and flavor)
  • 1 teaspoon honey or maple syrup (optional, if you like it sweeter)
  • Optional boosters: 1 teaspoon grated fresh ginger, 1 tablespoon chia seeds, or a few frozen strawberries

Method

  1. Prep the produce: Remove watermelon rind, cube the fruit, and chill it. Peel and chop cucumber. Juice the lime.
  2. Layer the blender: Add coconut water (or water) first, then watermelon, cucumber, lime juice, mint, and a pinch of salt.
  3. Add ice and sweetener: Toss in ice if you want it frosty. Add honey or maple only if your watermelon isn’t very sweet.
  4. Blend smooth: Start on low to break up the ice and mint, then blend on high for 30–45 seconds until silky.
  5. Taste and adjust: Add more lime for brightness, a splash of water if too thick, or a bit more mint if you want it cooler.
  6. Serve cold: Pour into chilled glasses. Garnish with a mint sprig or a thin cucumber slice if you’re feeling fancy.
