Prep the produce: Core and chop the apple. Peel and chop the cucumber. If using kale, remove tough stems.
Grate the ginger.
Layer the blender: Add liquid first, then greens and cucumber, then apple, avocado or yogurt, ginger, seeds, and ice.
Blend until smooth: Start low, then increase to high for 30–60 seconds until creamy with no leafy bits.
Taste and adjust: Add more lemon for brightness, a touch of sweetener if the apple is very tart, or a splash more liquid if too thick.
Serve right away: Pour into a chilled glass. Sprinkle extra chia or a pinch of sea salt on top if you like.
