Prep Time 10 minutes
Total Time 10 minutes
Servings: 2 servings

Ingredients

  • 1 large green apple (Granny Smith is ideal), cored and chopped
  • 1 cup packed baby spinach or chopped kale (stems removed)
  • 1/2 cup cucumber, peeled and chopped
  • 1/2 ripe avocado or 1/3 cup plain Greek yogurt (for creaminess)
  • 1 tablespoon fresh lemon juice (plus more to taste)
  • 1/2 to 1 teaspoon fresh ginger, peeled and grated (adjust to preference)
  • 1 tablespoon chia seeds or ground flaxseed
  • 3/4 to 1 cup cold water, coconut water, or unsweetened almond milk
  • 4–6 ice cubes (optional, for extra chill and body)
  • Optional sweetener: 1–2 teaspoons honey or a pitted medjool date, if needed
  • Pinch of sea salt (optional, to brighten flavors)

Method

  1. Prep the produce: Core and chop the apple. Peel and chop the cucumber. If using kale, remove tough stems. Grate the ginger.
  2. Layer the blender: Add liquid first, then greens and cucumber, then apple, avocado or yogurt, ginger, seeds, and ice.
  3. Blend until smooth: Start low, then increase to high for 30–60 seconds until creamy with no leafy bits.
  4. Taste and adjust: Add more lemon for brightness, a touch of sweetener if the apple is very tart, or a splash more liquid if too thick.
  5. Serve right away: Pour into a chilled glass. Sprinkle extra chia or a pinch of sea salt on top if you like.
