Cucumber Mint Detox Smoothie - Cool, Refreshing, and Light

Ingredients
  

  • 1 medium cucumber, peeled if waxed, roughly chopped
  • 1 small green apple, cored and chopped (or 1/2 ripe pear)
  • 1 cup fresh spinach or baby kale, packed
  • 1/4 cup fresh mint leaves, loosely packed (about a small handful)
  • 1 tablespoon fresh lemon juice (plus a little zest if you like)
  • 1/2 to 1 teaspoon fresh ginger, grated or thinly sliced
  • 1/2 cup coconut water or cold water (more to thin)
  • 1/2 cup ice (optional, for extra chill)
  • Optional add-ins: 1/2 avocado (creaminess), 1 tablespoon chia or hemp seeds (fiber/protein), 1/2 cup frozen pineapple (sweetness), a pinch of sea salt
  • Optional sweetener: 1–2 teaspoons honey, maple syrup, or a pitted date if you prefer it sweeter

Method
 

  1. Prep your produce: Wash everything well. Roughly chop the cucumber and apple. If your cucumber is waxed, peel it. Remove tough mint stems.
  2. Layer your blender: Add coconut water (or water) first, then cucumber, apple, spinach, mint, lemon juice, and ginger.
  3. Blend: Start on low and work up to high. Blend until smooth, 30–60 seconds.
  4. Adjust texture: If it’s too thick, add more water. For extra chill, toss in ice and blend again.
  5. Taste and tweak: Add a touch of sweetener if needed, or more lemon for brightness. A pinch of salt can boost flavor.
  6. Serve: Pour into a cold glass and sip right away for the freshest taste.
