Prep your produce: Wash everything well. Roughly chop the cucumber and apple.
If your cucumber is waxed, peel it. Remove tough mint stems.
Layer your blender: Add coconut water (or water) first, then cucumber, apple, spinach, mint, lemon juice, and ginger.
Blend: Start on low and work up to high. Blend until smooth, 30–60 seconds.
Adjust texture: If it’s too thick, add more water.
For extra chill, toss in ice and blend again.
Taste and tweak: Add a touch of sweetener if needed, or more lemon for brightness. A pinch of salt can boost flavor.
Serve: Pour into a cold glass and sip right away for the freshest taste.
